Vegetable Recipes - 5


Stuffed Brinjol or Aubergines (Bharva Baingan)


Ingredients:
1/4 cup - Oil
4 No - Aubergines
4 No - Small Potatoes
1/2 cup - Coriander
1 cup - Grated coconut
4-5 No - Garlic finely chopped
1 inch - Ginger Stick finely chopped
2-3 No - Green Chilli finely chopped
3 No - Onion medium finely chopped
1 tbsp - Dry mango powder (Amchur) or Lemon Juice
1 tsp - Red chilly powder
1 tbsp - Garam Masala
1 tbsp - Coriander Powder
1/4 tsp - Turmeric
Salt to taste


Method:
Grate coconut and then add the remaining ingredients to it.
Wash and slice the aubergine and potato so as to fill it with the masala.


Add the oil and cook the potatoes and aubergine till done.

Tip1: You can replace coconut with peanut powder and fenugreek leaves. Peanut powder (4 tbsp) fenugreek (1/4 cup)

Tip 2: You can replace coconut with peanut powder and spinach. Peanut powder (4 tbsp) Spinach (1/4 cup)

Tip 3: Use the ready Marathi kala masala as a stuffing.

You can use coconut with all the above as well.
