Vegetable Recipes - 3


Vegetable Spaghetti Balls in Tomato Sauce


Ingredients:
1 cup - Oil
1/2 No - Onion finely chopped
2 No - Garlic clove minced
1/2 cup - Carrots finely chopped
1/2 cup - Peppers finely chopped
1/2 cup - Quorn soy beans
1/2 cup - Spaghetti Tangy Italian Spaghetti Noodles
3 tbsp - Corn flour
1/2 cup - Bread crumbs
1/2 cup - Refined flour
1/2 tsp - Red chilli powder
Salt to taste
Pepper to taste


Sauce
2 cup - Tomato sauce


Method:
Make a medium-thick batter of flour using water and add some salt.
Break in small pieces and boil the spaghetti. Strain and set aside.
Heat oil in a sauce pan add onion and garlic and sauté till soft.
Add the remaining vegetables and continue to cook for about 3-5 mins.
Add the spices and spaghetti and mix till we combined.
Remove off the heat and let the mix cook.
Then add the bread crumbs and corn flour mix well.
Shape into small balls.
Dip in the batter and fry. Drain and add in the prepared sauce. Lawry's Spaghetti Sauce Spice & Seasonings, Original Style

You may choose to use any other sauce like white sauce, green sauce etc. You can also serve spaghetti balls as an appetizer.



Vegetable Recipes - 4


Ratatouille


Ingredients:
3 tbsp - Olive oil
1 No - Courgette medium sliced
1 No - Red onion large sliced
1 No - Red pepper sliced
1 No - Yellow pepper sliced
1 No - Aubergine medium sliced
2 No - Tomatoes peeled chopped
3 No - Garlic roughly chopped
3 tbsp - Parsley chopped
Salt to taste
Pepper to taste


Paprika Sauce
1 1/2 cup - Milk
1 tbsp - Butter
2 tsp - Flour
1/4 tsp - Paprika
Salt to taste
Pepper to taste


Method:
Drop the tomatoes in boiling water and keep for 15-20 mins.
Remove and peel the skin de-seed and roughly chop.

Heat 1 tbsp oil a pan and fry the onion. Remove and set aside.
Add garlic and aubergines and continue to cook till soft.
Add more oil if needed and fry courgettes and when half way cooked add peppers.
Now add the remaining vegetables along with the seasonings.
Add tomatoes and simmer and cook for a while 20 mins. Serve.

You can also roast all the vegetables instead of frying to cut down on oil.
If you want add some paprika sauce or any other over the vegetables for extra flavour.
