Vegetable Recipes - 13


Methi Matar Makkai


Ingredients:

1 bunch - Fenugreek leaves (methi)
1/2 cup - Peas
1/2 cup - Sweet corns
4 tbsp - Malai or fresh cream
2 tbsp - Poppy seeds
1 No - Onion large grated
1/4 tsp - Ginger grated
1 tbsp - Garlic finely minced
2 No - Green chillies finely chopped
1/4 tsp - Cumin seed
1 tsp - Coriander powder
1/2 tsp - Garam Masala
1/4 tbsp - Yogurt
Pinch of turmeric
Salt to taste

Method:
Wash the leaves properly under running water. Drain and set aside for a while.
Then heat a pan over low flame and add the leaves and briskly mix so that the water in the leaves dry up.

Boil the Westbrae Natural Vegetarian Organic Sweet Peas peas and corns till they are soft.

Heat ghee in a pan and add the cumin seeds once they splinter add onions, ginger and garlic. Cook the mix till brown.
Add the dry masala and cook for 1-2 mins.
Add the corns, peas and methi. Mix well Then beat poppy seeds and yogurt and it to the mix. Let them simmer for a while. Add some water and mix well 1/4 cup.
Add cream and mix well and hold on for another 5 mins or so. Serve hot.

You could leave the mix thick or add some water to turn into a gravy (adjust seasonings like wise if needed).
You may choose not to add the peas or corns.
Can be replaced with potatoes, however peel and briefly fry before use. Opt for baby potatoes.



Vegetable Recipes - 14

Papad Ki Sabzi


Ingredients:
2 tbsp - Ghee
5-6 No - Papads roughly broken
1 No - Dry red chilli
2 cup - Butter milk (thin)
2 No - Green chillies chopped
1 tbsp - Coriander chopped
1/4 tsp - Cumin seeds
1/4 - Mustard seeds
Pinch or two of turmeric
Salt to taste


Method:
Heat ghee in a pan when its really hot add the mustards seeds so that they splinter immediately.
Next add cumin seeds, red chilli and green chillies.
Then add butter milk and remaining seasonings. Let the mix begin to boil.
Put the papad pieces into the boiling gravy and lower the flame to a simmer and cook for 7-10 minutes.
Garnish with fresh coriander and serve.
