Vegetable Recipes - 5


Raw Mango Vegetable (Keri ki Sabzi)


Ingredients:
2 tsp - Oil
2 No - Raw mango sliced (keri)
2 No - Green chillies chopped
1/2 tsp - Mustard seeds
1 No - Garlic grated
3 tbsp - Coconut grated
1/2 tsp - Cumin seeds
1/2 tsp - Coriander powder
2 Pinch turmeric
2 Pinch Asafoetida
Salt to taste


Method:
Heat oil and add the seeds. Once they splinter add the rest with a little water and cook for a while.
Then add the mango slices and cook further. Serve hot.



Recipe - 6


Jackfruit Vegetable (Kathal ki Sabzi)


Ingredients:
1 tbsp - Oil
1 No - Bay leaf
1 cup - Jackfruit chopped (Kathal)
1 No - Onion grated
2 No - Green chillies chopped
3 tbsp - Tomato puree
1/2 cup - Tomato puree
1 No - Garlic grated
1/4 tsp - Ginger grated
1/2 tsp - Garam Masala
2 Pinch turmeric
Salt to taste


Method:
Heat oil and add the bay leaf , chillies and onion. Cook the onions till brown and then add ginger garlic and cook for 1-2 mins.
Then add the jack fruit and cook further.
Add the rest and cook till the mix leaves oil.
Add some water if you would like to form curry or else serve hot with bread or chapatti.

Method:
Wash and dry the chillies.
Make a slit half way to add the filling. Rajah Garam Masala (Spice Mix) 100g
Mix the other ingredients with some/all oil (as needed) and using your hands bind the mix.
Then fill this mix in the chillies and shallow fry them.
