Vegetable Recipes - 1


Stuffed Capsicum or Peppers (Bharva Shimla Mirch)


Ingredients:
1/4 cup - Oil
4 No - Peppers
5 No - Medium Potatoes
6 No - Garlic cloves finely chopped
1 inch - Ginger finely chopped
3 No - Green chillies finely chopped
2 No - Medium onions finely chopped
1 tsp - Amchur (Dry mango powder) or Lemon Juice
1 tbsp - Garam Masala
1/8 tsp - Turmeric (optional)
Salt to taste


Method:
Wash and cut the top of the capsicum so as to add the filling.
Fill the hollow with mashed potato mix.
Heat oil in a pan add the stuffed capsicum and cook over low heat till tender. Or baste the outer covering with oil and let the capsicum cook in the micro till tender.

Potato mix
Boil the potatoes or give them dry steam in the pressure cooker or microwave.
Remove let them cool and then peel the skin.
Mash well and add the remaining ingredients.

It's best to give dry steam, for this recipe to prevent the potatoes from getting soggy.
For dry steam - Place the potatoes in a dry vessel in a pressure cooker with water at the base or tie them in a plastic bag and prick it all over and microwave.

You can replace potato with panner.
Also you can use a mix of potato and panner, potato and cheese, panner and cheese. If adding cheese you should bake the dish.
Panner (1/2 kg) Cheese (1/4 or 1/2 cup)

Shahi Panner

Ingredients:
2 tbsp - Oil
1 cup - Panner diced
1 No - Onion large finely chopped
1 inch - Ginger grated
1/4 tsp - Garlic finely chopped
1 tsp - Coriander powder
1 tsp - Garam Masala Powder
1 No - Bay Leaf
4 No - Kashmiri red chillies soaked
1/4 cup - Tomatoes pureed
1 tbsp - Tomato paste
1/4 tsp - Cumin seeds
2 tbsp - Curd beaten
1 tbsp - Cashew Nuts
1 tsp - Ketchup
Pinch of dry fenugreek powder (kesuri methi)
Pinch of cardamom
Salt to taste


Method:
Soak the red chillies over night in water or atlest 4-5 hours before and then grind to make a paste.
Also soak cashews from 1-5 hours.

Heat oil in a pan and add cumin seeds once they splinter add the bay leaf, onion, ginger and garlic. Fry till they turn brown.
Add the red chilli paste, cardamom, powders, fenugreek and salt. Cook till fragrant.
Add the tomatoes, ketchup and cook till the mix is fragrant and oil oozes from all sides (8-10 mins).
Then mix the nuts and cream and add it to the above. Let the mxiture cook for a while.
Add the panner mix well and serve hot. Garnish with coriander and serve hot with rice or roti. Tasty Bite Paneer Makhani Entree, Heat & Eat
