Vegetable Recipes - 12


Vegetable Chilli


Ingredients:
2 tbsp - Olive oil
1/4 cup - Red bell pepper
3 tbsp - Jalapenos
1/2 cup - White or red beans
1/4 cup - Bell peppers
1 No - Zucchini diced
1 No - Red onion large diced
1/2 cup - Tomatoes diced
4 No - Garlic cloves chopped
1 tsp - Oregano dried
2 tbsp - Lemon juice
1/4 tsp - Paprika
Salt to taste
Pepper to taste


Method:
Heat olive oil in a pan and saute onions till pink. Add garlic, cook for a minute or two.
Add zucchini, and bell peppers, jalapenos and cook for a while.
Add the tomatoes and seasonings.

Vegetable Recipes - 13


Vegetable Couscous


Ingredients:
2 tbsp - Olive oil
1 stick - Cinnamon
3/4 cup - Couscous
1 No - Red bell peppers diced
1 No - Onion diced
1 No - Zucchini diced
1 No - Tomato roughly chopped
1 cup - Vegetable broth
1/4 tsp - Cayenne pepper
1/4 tsp - Cumin powder
2 tbsp - Lemon juice
2 tbsp - Cilantro chopped
1/8 tsp - Pepper
Salt to taste


Method:
Heat olive oil in a pan and saute onions till pink. Add the vegetables and cinnamon continue to cook.
Add salt, cover and cook at lower heat till the vegetables are done.
Add the tomatoes and spices and cook further for a 5 mins.
Put couscous in a bowl.
Pour boiling stock over couscous and waitabout 5 mins.
Fluff the Couscous with a fork and add the vegetables, lemon juice and cilantro mix.
Adjust the seasoning and serve. Israeli Couscous
