Ingredients: 2 tbsp - Olive oil 2 cup - Potatoes chopped 1 cup - Red lentils or puy lentils 1 No - Onion large finely sliced 1 No - Carrot medium finely sliced 1 No - Leek or celery finely sliced 1 cup - Peas boiled 1 cup - Tomatoes diced 1 tbsp - Tomato paste 4 No - Garlic cloves chopped 2 tsp - Oregano dried 1 1/4 tsp - Red chilli flakes 1/4 cup - Milk 1 tbsp - Butter 3 tbsp - Cheese or more Salt to taste Pepper to taste Method: Heat water in a pot and cook the lentils until just soft, drain, but save 1/2 of the cooking liquid. Heat oil in another pan and fry the onions till soft. Add the garlic and chili flakes fry for 2 min. Add the peas, leek and carrot and fry for another 5-7 mins. Add the cooked lentils, tomato and seasoning. If the mixture is very thick add a little of the reserved cooking liquid from the lentils.
Peel, cut and boil the potatoes until soft. Drain and then add salt, butter and milk. Mash the potatoes then cover and bake till golden brown.
