Vegetable Recipes - 9


Palak Do Pyaza


Ingredients:
3 bunch - Spinach finely chopped
1/4 kg - Panner
3 tbsp - Oil
1/2 cup - Onion
1 tbsp - Tomato puree
1 No - Tomato finely chopped
1/2 tsp - Cumin
4 No - Green chilli finely chopped
1 tbsp - Coriander powder
4 No - Garlic finely chopped
1/4 tsp - Turmeric
1 tbsp - Garam masala
1/8 tsp - Pepper
1/4 tsp - Kesuri methi
2 tbsp - Fresh Cream


Method:
Heat oil a pan and when hot add cumin.
When the cumin spilt add onions and saute till light brown.
Then add garlic and green chillies cook till brown.
To it add finely chopped tomato and tomato paste.
When the mix cooks well add the masalas.
Spinach will leave water so let the mix cook till most of the water evaporates.
Then add the fresh cream along with corn flour.
Mix well and add panner. Cut the panner in squares and grill them you could choose to fry as well.
Simmer and let it cook for a while. Serve hot. Tasty Bite Entree, Kashmir Spinach

Vegetable Makhanwala


Ingredients:
3 tbsp - Oil
2 No - Potatoes
2 No - Carrots medium
1 cup - Green peas
1/2 cup - French beans
2 No - Peppers
1 cup - Paneer chopped
1/2 cup - Cauliflower
4 tbsp - Tomatoes paste
1 cup - Tomatoes
2 No - Onion finely chopped
1 inch - Ginger finely chopped
5-6 No - Garlic finely chopped
4-5 No - Kashmiri chilli paste
2 tbsp - Ketchup
1/8 tsp - Turmeric powder
2 tbsp - Coriander powder
1/8 tsp - Kesuri methi
1/2 tbsp - Garam masala powder
1 tsp - Cumin
3-4 tbsp - Cream or malai
2 tbsp - Cashew nut paste
Pinch or two of ground black cardamom
Salt to taste


Tadka
1 tbsp - Oil
5 No - Peppercorns
1 No - Bay leaf
3-4 No - Cloves
1 stick - Cinnamon


Method:
Fry the vegetables or boil.
Heat oil in pan and when hot add cumin.
When the cumin spilt add the onion paste (grind the onions, garlic, chilli, ginger, cashew nuts) and cook till deep brown.
Then add the soaked Kashmiri chilli paste and cook till oil oozes.
Then add the tomatoes and let them cook with the remaining masalas.
Add the kesuri methi and cream and cook for 2-3mins.
Then add the remaining vegetables and let the mix cook till well combined.
Before serving add the tadka for enhanced flavour.

Tip: If tomatoes are sour than add sugar. Tasty Bite Entree, Jaipur Vegetables

You can use this as a red gravy base and make variations like panner gravy, pea-potatoes and masala corns.
