Vegetable Recipes - 7


Ginger Lemon Vegetables


Ingredients:
2 tbsp - Oil
2 No - Baby carrots sliced
1 No - Zucchini medium sliced
1 No - Leek or celery chopped
6 No - Baby corns sliced
6-8 No - Snow peas
6-8 No - Mushrooms halved
1/2 tsp - Garlic finely chopped
1/2 tsp - Ginger grated
1 No - Green chilli finely chopped
2 tbsp - Lemon juice
1 No - Seasoning cube
3 tbsp - Stock
1/4 tsp - Lemon rind grated
1/4 tsp - White pepper powder
1 tsp - Corn flour
1/4 cup - Water
1 tbsp - Soy sauce
1 1/2 tsp - Honey
Salt to taste


Method:
Heat oil in a wok or a pan, add chilli, garlic and cook till soft.
Add the ginger, vegetables and cook for 2-3 mins on medium heat.
Add the seasonings and mix well.
Dissolve the corn flour in water and add it to the vegetables.
Simmer and cook till done.

You can add any vegetables of your choice such as peppers, broccoli, cauliflower, tofu or cottage cheese, asparagus. Free spice sample of your choice click here


Vegetable Recipes - 8


Mongolian BBQ


Ingredients:
4 tbsp - Oil
1 cup - Cabbage shredded
1 cup - Bell peppers cut long slices
1 cup - Carrot shredded
1 cup - Baby corn cut long slices
1/2 No - Onion cut long slices
1 cup - Tofu shredded
1 cup - Bean sprout
1 cup - Leeks
1 cup - Mushroom sliced
1 cup - Water chestnuts skinned and cut into squares


Seasoning
2 No - Star anise
3 tbsp - Garlic finely chopped
2 tbsp - Ginger root finely chopped
1/4 cup - Spring onion with leaves chopped
1/2 tsp - Pepper
4 tbsp - Brown vinegar
2 cup - Cilantro minced
1 tsp - Sugar
1 cup - Soy sauce
5 cup - Water


Method:
On low a flame simmer soy sauce, water, peppercorns, star anise and garlic for a few minutes then strain and cool.
Add the sugar, ginger root, spring onions and cilantro cook for a while.
Add the vinegar as cooking progresses.
Take vegetables of your choice and add put them on a well greased grilling rack.
Add some of the prepared sauce and keep turning to prevent the vegetables from burning.
Serve hot with rice or noodles if you like.

Alternatively, heat oil in a wok and add all the vegetables to it.
Add the seasonings, stir-fry and cook till done.
