Ingredients: 4 tbsp - Oil 2 cup - Arbi peeled chopped 1 No - Onion large 1/4 cup - Tomatoes 1 cup - Water 1 tbsp - Garlic chopped 1 tsp - Ginger chopped 1/4 tsp - Red chilli powder 2 tsp - Coriander powder 1/4 tsp - Garam masala 1 tsp - Dry mango powder 2 pinches turmeric Salt to taste Method: Grind onion, garlic and ginger coarsely. Heat oil and add them and cook till brown. Grind and add tomatoes with the rest. Add water and cook till done. The water quantity can be increased or decreased as per your taste. For a dry vegetable use a cup and to make it wet add 2 to 3 cups water. Six Spices: A Simple Concept of Indian Cooking Vegetable Recipe - 8 Gatta Ki Sabzi
Ingredients: 2 cup - Gram flour 3 tbsp - Oil 1 tsp - Red chilli 1/4 cup - Water 2 pinches turmeric Salt to taste Method: Heat the water. Add all the ingredients to the gram flour except water. Bind the ingredients to form a dough using water sparingly. Roll the dough to make small thick cylindrical shapes 3 inch long. Keep aside. Ajika Besan or Chick Pea Flour Take a broad cooking pot and add enough water to boil the gatta. When it starts boiling add the gatta in it. The gatta will take about 5-7 mins to cook. Drain and set aside.
Cut the gatta into thick round pieces.
Add 1 tsp ginger, garlic paste to the basic recipe if desired. Vegetable gatta can be made using Greens - 2 tbsp spinach, fenugreek leaves, fresh coriander. Other vegetables - 2 tbsp each grated bottle gourd and carrot. Gravy 1 tsp - Oil 3 cup - Butter milk 1 1/2 tbsp - Rice flour 1/4 tsp - Sesame seed 1/4 tsp - Cumin seed 1/4 tsp - Mustard seed 1 No - Dry red chilli 1 No - Green chilli slit 1 tsp - Curry leaves 1 tsp - Coriander leaves 1/4 cup - Water Salt to taste BR> Free spice sample of your choice click here Method: In the butter milk add rice flour mix and keep aside. Heat ghee or oil and add the chillies, curry leaves and seeds in it. Once they crackle add the butter milk, water and gatta. Boil very well and add the coriander.
