Tomato Sauce Recipe

Ingredients:
1 tbsp – Olive oil
1 No – Bay leaf
1 No – Onion large finely chopped
3 No – Garlic cloves minced
2 tbsp – Tomato paste
1/8 tsp – Pepper
1/8 cup – Red wine (optional)
2 tbsp – Fresh basil chopped
9 No – Tomatoes peeled, deseeded, chopped
1/4 tsp – Oregano and Thyme (dried)
Salt to taste

Method:
Heat olive oil in a sauce pan and add the bay leaf.
Add onions and garlic saute till tender.
Chop the 7 tomatoes and puree in blender or food processor strain and set aside. Chop the 2 remaining tomatoes and set aside.
Now add the tomatoes (pureed and chopped), paste herb,seasoning and wine. Bring to a boil.
Reduce heat and let the mix simmer for a while for about 10-15 mins.

Options: You can roast and puree the tomatoes and add for better flavour Muir Glen Organic Tomato Sauce

If you wish to thicken the mix you can add some flour, or a mix of cheese and cream. Do not add these if you intend to store the sauce or else the sauce will curdle.
If you intend to store the sauce do so inĀ  an air tight container in the refrigerator (2-3 days) and freezer use within 15 days.
