Thanksgiving Recipes – Stuffed Zucchini
Ingredients:
1 tbsp – Oil
4 No – Zucchini small
1/2 cup – Beans boiled
1 No – Spring onion medium finely chopped
2 No – Garlic cloves minced
1/8 tsp – Oregano dried
1/8 tsp – Cumin powder
1/4 tsp – Chilli powder
Salt to taste
Paste
2 No – Chipotle peppers
1 No – Avocado peeled cubed (optional)
2 No – Tomatoes peeled finely chopped
2 tbsp – Olives chopped
4 tbsp – Sour cream
1/2 cup – Cheese
1/2 cup – Yogurt thick

Method:
Heat oil in a frying pan and saute garlic till golden.
Stir in the drained black beans, salt, cumin, oregano, and red pepper. Cook for 2-3 mins, taste, and adjust seasoning if required. Set aside.
In another bowl, combine the sour cream, yogurt, onions with the chipotle peppers and set aside.
Scoop out each zucchinis core, and poke tiny holes in the base of each pepper.
Stuff each zucchini, in order, with layers of the black bean mixture, sour cream, avocados, cheese, tomatoes, and olives.
Add 1/4 cup water to the bottom of the baking dish and bake the stuffing for approx. 30 min. Bake further if needed until the cooked through and lightly brown on top.
