Thanksgiving Recipes – Stuffed Artichokes
Any festive celebration such as (thanksgiving recipes, Christmas recipes etc) seems incomplete, without a sumptuous menu. Today, with the growing trend of vegetarianism more and more people are incorporating recipes from side dishes, appetizers to main course in their gatherings. Vegetarians are of 3 kinds
Lacto – consume dairy but no meat and eggs
Lacto-ovo – consume dairy and eggs but no meat
Vegan – consume nothing of animal origin
If you happen to be in the lacto – ovo category then the possibility of cooking gets fairly widened.
For a typical veggie thanksgiving meal you can begin by offering a variety of hot and cold finger food thanksgiving appetizers with dips or roasted mushrooms. The side dish can comprise of soup, stuffing’s made from fruits and veggies, rather than the traditional bird dripping. Some recipes include stuffed artichokes, peppers etc (made from nuts and raisins, mushrooms, textured apples). But most importantly any thanksgiving meal is centred around ‘roasted turkey’. which can be replaced with ‘tofurky’ or veggie mock turkey.
This new ‘tofurky’ entrant is most often loved but both meat and non-meat eaters. As it tastes pretty similar to the real turkey. Other accompaniments can include, mashed potatoes, dumplings, giblet and mushroom gravy, set the momentum for a perfect festive celebration.
The birth of tofukry is attributed to the animal right activist, who in 1998, through a public awareness drive to educated people about the unhealthy conditions and inhuman manner in which the turkeys were being breed. Tofu being high in fibre and nutrients with low fat content makes it safe for both for your heart (cholesterol) and pancreas (diabetes).
Stuffed Artichokes
Ingredients:
4-5 No – Artichokes
2 tbsp – Olive oil
1/2 tsp – Garlic finely chopped or minced
2 No – Green onion finely chopped
1/2 No – Celery stalk finely chopped (optional)
3/4 cup – White or brown rice
1 tbsp – Lemon juice
1/2 cup – Soy mince (quorn)
1 cup – Cheddar cheese
2-3 tbsp – Spaghetti sauce (optional)
Pepper to taste
Salt to taste
Method:
Steam artichokes, covered, for 20 minutes. Let it cool. Spread out the leaves and using a spoon even out the spikes.
Add the stuffing.
Heat oil in a pan and fry the garlic and onion till translucent.
Add the celery and seasonings and continue to cook till celery softens.
Add the sauce and cook for 2-3 mins.
Add 1/4 cheese to the mix and let it simmer 2-3 mins. Take it off the heat.
Add the cooked rice to the above mix and stir till well combined.
Then add the stuffing into the artichokes and add the remaining cheese on top. Bake till done.
Variation
Ingredients:
2 tbsp – Olive oil
1/2 tsp – Garlic finely chopped or minced
2 No – Green onion finely chopped
3/4 cup – White or brown rice
1/4 cup – Walnuts finely sliced
1/4 cup – Bread crumbs
2 tbsp – Parsley or thyme finely chopped
1 tbsp – Lemon juice
1 cup – Cheddar cheese or Feta cheese
Pepper to taste
Salt to taste
Dash of paprika
Method:
Same as above. Only being replaced with bread crumb filling.
