Thanksgiving Recipes – Spinach Bake

Ingredients:
3 tbsp – Olive oil
1/4 cup – Black olives
2 cup – Spinach leaves finely chopped
3 No – Spring onions finely chopped
1/4 cup – Sun dried tomatoes soaked and cut in strips
1/4 cup – Corns
1/4 cup – Cottage cheese sliced
1 tbsp – Fresh basil finely chopped
1 tbsp – Fresh oregano finely chopped
2 tbsp – Wine vinegar
1/4 cup – Vegetable Stock
1/2 cup – Tomato puree
1 tbsp – Tomato paste
1-2 No – Bread slice mashed (sour or day old will be better)
3 No – Garlic clove minced
1 tsp – Hot pepper flakes crushed
1/4 tsp – Pepper
Salt to taste

Method:
Heat some oil in a pan over medium flame add garlic, spring onions and saute for 1-2 mins.
Add 1 tbsp wine and briefly stir the mix.
Then add herbs, seasoning, vegetables (cottage cheese, spinach, baby corn) and saute for 1-2 min.
In another pan heat remaining oil and add the tomatoes, stock and wine.
Let the mix simmer for a while and then add the bread. If needed run in hand blender.
Place the vegetables on a baking tray. Take the sauce mix off the heat and pour it over the vegetables.
Garnish with sun dried tomatoes, olives and cheese. Serve with bread or rice.
You can add pasta and bake. Or add 1/2 cup of red lentils or beans and increase the proportion of the seasoning like wise.
