Thanksgiving Recipes – Cauliflower Florentine
Ingredients:
1 tbsp – Oil
1 No – Cauliflower small chopped
1 tbsp – Lemon juice
3 No – Spring onion medium finely sliced
3 tbsp – Curd hung
3 tbsp – Cheese grated
3 tbsp – Panner grated (cottage cheese)
1/4 tsp – Nutmeg powder
50 gms – Potato wafers
Salt to taste
White pepper to taste

Method:
Soak the cauliflower in hot water for 10 mins.
Drain roughly chop and add lemon juice and keep aside for another 10 mins.
Heat oil in a pan and sauté spring onions and set aside.
Beat curd, cheese, nutmeg, pepper, salt and panner till creamy and thick.
In a greased dish arrange by layer cauliflower at the base, layer with the creamy mixture, add spring onions.
Then garnish with crushed potato wafers and bake for 20 mins.
