Thanksgiving Recipes - 4


Tofu Stuffing


Ingredients:
1 tbsp - Oil
1 cup - Tofu
1 No - Red onion finely chopped
1 1/2 cup - Spinach chopped
1/2 No - Carrot finely chopped or grated
1/2 cup - Mushrooms finely chopped
1 cup - Sweet corn
1/2 No - Leek finely chopped
1/4 tsp - Cumin powder
1/4 tsp - Thyme
1/4 tsp - Rosemary
1/4 tsp - Pepper
Salt to taste


Marinade
1/2 cup - Vegetablebroth stock
1 tsp - Soy sauce
2 tbsp - Parsley minced
4 No - Garlic cloves minced


Paste
1/8 tsp - Cardamom
1/4 tsp - Cumin seeds
2 No - Garlic clove
1 tsp - Coriander seeds
3 No - Chillies dried
Pinch of cinnamon


Method:
Prepare a marinade of these ingredients and soak the tofu in it for an hour. Free spice sample of your choice click here

Cut the tofu in broad triangles or square.
Cut around the edges of the long side of each triangle, approx. 1/4 inch away from the edge.
Make smaller cuts such that you are able to scoop out the central portion for adding in the filling. Remove the central portion and set aside.

Heat oil in a saucepan and add onions, carrot and leeks cook until soft.
Add the spinach mushrooms, corns and cook till soft and (all the water from spinach etc dries up).
Then add the cumin, salt, pepper and herbs and saute for a 1-2 mins.

Drain the marinade from the tofu and reserve it.
Add 1/4 cup of the marinade to the spinach mix.
Begin stuffing the tofu slices with the spinach mix (as much as can fit in).
Follow the same with the remaining tofu slices (using additional marinade).
Place the stuffed tofu in the baking dishes. Bake until the tofu becomes light brown.
If you are making a mushroom gravy to serve along with the tofu you can add the scooped out portion of the tofu to it if you like. Tofu Cookery

Pepper Stuffing


Ingredients:
4-5 No - Peppers or bell peppers
1/2 cup - Dry fruits sliced (mix of raisins, almonds and walnuts)
1 cup - Feta cheese crumbled
3/4 cup - Any cheese
1 tbsp - Parsley chopped
1/8 tsp - Nutmeg
1/4 cup - Bread crumbs
1 tbsp - Lemon zest grated
1 tbsp - Lemon juice
Pepper to taste
Salt to taste


Method:
Cut the peppers in half and scoop out the central portion and then add in the filling.
Or do the same with out slitting the peppers.
Heat oil in a pan and saute onion till translucent.
Mix rest of the ingredients in another bowl, except for the cheese.
Then add the stuffing into the peppers and garnish with cheese. Brush the outside with a little oil and bake till done.
You could also replace the dry fruits with rice and pour 1/2 - 3/4 cup salsa and bake. Texas Peppers: The Jalapeno Cookbook (Flavors of Home)
