Thanksgiving Recipes - 2


Acron Stuffing


Ingredients:
1 No - Squash
2 tbsp - Olive oil
1 cup - Couscous
1 No - Green onion finely chopped
2 tbsp - Raisins
1 tbsp - Pecans toasted chopped
1 tbsp - Apricots or cranberry dried chopped
1/2 cup - Feta cheese
1 cup - Vegetable stock
Salt to taste
Pepper to taste


Paste
1/8 tsp - Cardamom
1/4 tsp - Cumin seeds
2 No - Garlic clove
1 tsp - Coriander seeds
3 No - Chillies dried
Pinch of cinnamon


Method:
Grind to make a paste.

Steam squash halves until tender. Drain and place on a baking sheet.
Heat oil in a saucepan and add onion and saute until soft.
Add the paste ingredients and fry for few minutes.
Add stock and bring to the boil.
Remove from heat and add couscous. Let the mix stand until liquid is absorbed. Fluff with a fork and add the remaining ingredients except for cheese.
Fill squash with the couscous mixture and top with cheese. Bake till the cheese begins to brown. Newman's Own® Organics Organic California Raisins

You can add this filling in peppers, portobello mushrooms as well as in aubergines. Traverse Bay Dried Cranberries

Zucchini Stuffing


Ingredients:
1 tbsp - Oil
4 No - Zucchini
1/2 cup - Beans boiled
2 No - Green onions finely chopped
1 No - Jalapenos finely chopped
2 No - Garlic cloves minced
2 No - Tomatoes peeled finely chopped
1 tbsp - Sour cream
1 tbsp - Basil finely chopped
1 cup - Cheese
1 tbsp - Lemon juice
Salt to taste


Method:
Cook zucchini in boiling water, till tender. Drain and scoop out the center approx. 1/4 inch away from the edge.
Make smaller cuts such that you are able to scoop out the central portion for adding in the filling. Remove the central portion and set aside.
Heat oil in a saucepan and add onion, garlic, jalapenos and saute until soft.
Add the rest except beans and cook for a few minutes.
Add the centre portion of the zucchini and cook further.
Add the beans and lightly mash them.
Then add sour cream and 1/4 cup cheese. Mix well.
Spoon the filling in each of the zucchini and sprinkle cheese.
