Thanksgiving Appetizers – Spiced Aubergine Batons

Ingredients:
Oil as needed
3 No – Aubergines purple small
1 No – Garlic clove
2 tbsp – Coconut milk thick
1/8 tsp – Nutmeg
1/8 tsp – Cinnamon
1/8 tsp – Black cardamom
1/4 tsp – Ginger minced
1/4 tsp – Garlic minced
1/2 tsp – Green chillies finely chopped
2 No – Tomatoes chopped
1/8 tsp – Corn flour
Salt to taste

Method:
Heat oil in a pan and briefly stir fry the aubergines and garlic clove. Remove and set aside.
Add oil in the same pan and cook ginger, chillies and garlic till pink.
Then add the tomatoes and seasonings and cook for a while (5 mins).
Add the seasonings and corn flour to the coconut milk.
Add it to the tomatoes and let the mix simmer.
Add the aubergines mix well and serve.

You can also roast or grill aubergines. Instead of coconut milk use thick yogurt.
