Thanksgiving Appetizers – Green Tofu

Ingredients:
1 tbsp – Oil
9-10 No - Mori-Nu Tofu Lite long thick slices
1 tbsp – Coriander minced
2 tbsp – Spinach paste
1/4 tsp – Ginger finely chopped
2 tbsp – Green chilli sauce
1/4 – Garlic finely chopped
1/4 tsp – Sugar
1 tsp – Grated lemon zest
1 No – Seasoning cube
1/4 tsp – Sesame seeds toasted
1/4 tsp – Light soy sauce (optional)
Pepper to taste
Salt to taste

Method:
Heat oil in a pan and add ginger, garlic and saute till the mix begins to change colour.
Then add coriander and lemon zest and stir for a few seconds.
Then add the spinach (it should be boiled spinach paste not raw), sugar, soy, stock cube, salt and pepper and cook over low heat till the water evaporates.
Baste tofu with some oil and grill till brown. Add it to the mix toss and serve hot garnished with sesame seeds.

You can add mushrooms along with tofu or replace with any other vegetable of your choice.
