Thai Peanut Sauce Recipe

Peanut sauce forms an essential part of south East Asian cuisine. Right from being a part of mainstay cooking, it is also served as a dipping sauce. Some varieties include satay sauce, bumbu kacang, or sambal kacang of Indonesian, Malay and Thai cuisine.
The main ingredient used is ground roasted peanut and at times it us substituted with peanut butter. Several different recipes for making peanut sauces exist, resulting in a variety of flavours.

Ingredients:
1 tbsp – Oil
1 tbsp – Red curry paste
3 tbsp – Peanuts roasted
1 cup – Thick coconut milk
2 tbsp – Sugar
2 tsp – Lemon juice
Salt to taste

Method:
Grind the peanuts to a fine powder.
In a sauce pan heat oil add the curry paste and fry till it blends well in the oil.
Lower the heat and gradually add coconut milk. Keep stirring till a rich red colour appears.
Add the remaining ingredients stirring continuously till a thick sauce is formed.
Set aside to cool.
