Simple Appetizers – Vegetable Satay
Satay is a dish made from grilling/barbecuing different meats over wood or charcoal fire normally on bamboo skewers. It is served with various spicy seasonings, the most popular being peanut sauce.
Satay is available almost every where in South East Asia, though it is believed to have originated in Java/Indonesia in the early 19th century, due to the heavy influx of Muslim, Tamil Indian and Arab immigrants in the region.
Indonesian satay has several popular variants of which, ‘Satay Madura’ is the best known and most popular. This type of satay usually uses lamb or chicken, marinated in sugar, green onions, soy sauce and salt.
Ingredients:
2 tbsp – Oil
1/2 cup – Pepper diced
1/2 cup – Tofu or cottage cheese
1/2 cup – Mushrooms
10 No – Shallots
1/4 cup – Baby corn sliced
1/4 cup – Cauliflower diced
1/2 cup – Coconut Milk
2 tbsp – Garlic finely chopped
1/2 tsp – Pepper powder
1 tsp – Coriander seeds
1 tsp – Ginger root finely chopped
1 tsp – Cumin powder
2 tsp – Coriander roots
1 tsp – Lemon grass chopped
2 tbsp – Curry powder
1 tbsp – Soy sauce
1 tbsp – Sugar
1 tsp – Salt
Method:
Grind coriander, garlic, lemon grass and ginger to a paste.
Add the paste to a pan and add add the remaining ingreidents.

Place the ingredients on a grilling tray or tie them to a stay stick.
Grill till the vegetables are done and serve with peanut sauce.
