Simple Appetizers – Vegetable Platter

Ingredients:
2 tbsp – Oil
5 No – Large mushrooms halved
2 No – Peppers cut into broad chunky pieces
1/2 cup – Tofu or cottage cheese cut into broad chunky pieces
1 No – Red onion cut into broad chunky pieces
1 No – Carrot cut into broad chunky pieces
1/4 tsp – Cumin powder
1/4 tsp – Ginger powder
1 tbsp – Garlic finely chopped
1/4 tsp – Red chillies finely chopped
1 tbsp – Coriander finely chopped
2 tbsp – Lemon juice
Rock salt to taste

Method:
Mix all the ingredients from cumin powder onwards along with oil in a bowl.
Add the vegetables and let them marinate for about 20 mins.
Arrange the vegetables on an aluminium foil.
Grill or roast and serve hot with lemon wedges.
