Simple Appetizers – Mushroom Spinach in Miso Sauce
Miso is a traditional Japanese seasoning created by blending grains (rice, barely) and/or soybeans with a fungus called ‘kōjiki’.
This results in a thick paste which can be used for sauces and spreads, pickling vegetables and as a soup.
The paste is available in a variety of flavours – salty, sweet, earthy, fruity, and savoury.
High in protein and rich in vitamins and minerals miso plays a key nutritional role in Japanese cooking. And in recent years has gained much world-wide interest too.
Ingredients:
2 tbsp – Sesame Oil
1 1/4 cup – Spinach chopped
1/4 cup – Button mushrooms shredded
1 tbsp – Rice vinegar
1 tsp – Ginger grated
1 tsp – Garlic minced
1 tbsp – Soy Sauce
1 tbsp – Miso dressing
Method:
Heat sesame oil in a wok over medium heat and briefly stir-fry ginger garlic and mushrooms fro about 2 mins.
Then add the spinach and further fry.
Mix the remaining ingredients together and then add to the mushroom spinach mix and serve. Pietro Sesame And Miso (Soybean Curd) Dressing
