Simple Appetizers - 9


Dumplings


Ingredients:
1 tbsp - Oil
1/4 cup - Celery or cabbage finely shredded
5 tbsp - Capsicum finely shredded
5 tbsp - French beans finely shredded
3 No - Carrot chopped finely shredded
1/4 cup - Spring onion chopped
1 tbsp - White wine
1 tsp - White pepper
1 tsp - Salt


Dough
2 cup - Cornstarch or flour
1 cup - Boiling Water


Sauce
1/4 cup - Light soy sauce
1 tsp - Sesame oil


Method:
Mix together the sauce ingredients to prepare the dipping sauce.
Mix all the dumpling ingredients together.
In another pan add the corn flour to boiling water and knead to form a light dough.
Divide the dough in half. Shape each half into a roll and cut each roll into 1/2 inch slices.
Roll 1 slice of dough into a small moon shaped circle approx 3 inches add the mixture in the centre of the circle.
Lift up the edges of the circle and pinch to create a pouch and then pinch the top together.
Repeat with the remaining dough.
Heat a wok or pan until very hot.
Add the oil and drop the dumplings and cook till you get a light brown colour at the base.
Add 1/2 cup water. Cover and cook 5-7 mins, or until the water is absorbed.
Repeat with the remaining dumplings.

Simple Appetizers - 10


Mushroom Spinach in Miso Sauce


Ingredients:
2 tbsp - Sesame Oil
1 1/4 cup - Spinach chopped
1/4 cup - Button mushrooms shredded
1 tbsp - Rice vinegar
1 tsp - Ginger grated
1 tsp - Garlic minced
1 tbsp - Soy Sauce
1 tbsp - Miso dressing


Method:
Heat sesame oil in a wok over medium heat and briefly stir-fry ginger garlic and mushrooms fro about 2 mins.
Then add the spinach and further fry.
Mix the remaining ingredients together and then add to the mushroom spinach mix and serve. Pietro Sesame And Miso (Soybean Curd) Dressing
