Salad Recipes – Rice Salad

Ingredients:
3 tbsp – Chilli oil
1 tbsp – Sesame seeds toasted
2 tbsp – Sesame paste
1 cup – Rice cooked
3 tbsp – Spring greens chopped
3 tbsp – Button mushrooms chopped
3 tbsp – Carrot chopped
3 tbsp – Pepper chopped
1 No – Cucumber medium chopped
1 tbsp – Soy sauce
1/2 tsp – Garlic minced
1/2 No – Ginger minced
2 tbsp – Rice vinegar
1 tbsp – Parsley fresh minced
1/2 tsp – Pepper
Salt to taste

Method:
Bring a large pot of water to a boil add rice. Once cooked drain the rice and set aside for a while so that they go completely dry.
Then mix with 1 tbsp chilli oil.

Heat the other oil in a pan over medium heat. Gently cook the minced garlic and grated ginger until just fragrant. Remove from the heat and set aside.

In a bowl, combine the sesame paste, soy sauce, parsley, rice vinegar, salt and pepper.
Whisk until the mixture is smooth and stir in the cooked garlic and ginger.
Pour the sauce over the rice and vegetables and toss.
Transfer to large bowl or deep serving dish and sprinkle the sesame seeds and greens on top.
