Salad Recipes – Raita
Raita is a form of North Indian salad made by blending thick yogurt with fruits, vegetables, and spices. There are several variations of this base recipe which range from almost sweet to intensely spicy. In the West Indian restaurants normally make raita from a mix of yogurt and cucumber.
Ingredients:
1 No – Cucumber medium diced
1 No – Tomato mdium diced
1 No – Green peppermedium diced (optional)
1 No – Red onion medium diced
1 cup – Yogurt
3 tbsp – Spring greens (optional)
2 No – Green chillies finely chopped
1-2 tbsp – Lemon juice
1/4 tsp – Cumin powder
Salt to taste

Method:
Beat yogurt very well and then add chillies, lemon, cumin and salt.
Add the remaining salad ingredients.
Garnish with greens and serve.
