Salad Recipes – Neapolitan Salad Bowl

Based in the ancient roots of the Greco-Roman era, Neapolitan cuisine has enriched over the centuries by the influence of different cultures that controlled Naples its surrounding kingdoms.
The culinary contribution of this cuisine ha been immense, right from the local aristocratic recipes prepared till this day, based on pasta and rice to the rural cooking based on beans and pasta, vegetables etc.
Among the traces of classic culinary tastes lies this simple salad recipe.

Ingredients:
1 No – Green pepper small thinly sliced
1 No – Red pepper small thinly sliced
6 No – Olives halved
100 gms – Sweet corn boiled
1 No – Lettuce head shredded
4 No – Tomato medium quartered
50 gms – Mozarella cheese chopped
1 tbsp – Basil chopped

Vinaigrette Dressing
1/2 cup – Olive oil
3 tbsp – White vinegar
3 tbsp – Water
1/2 tsp – Oregano
1/4 tsp – Mustard
1 No – Garlic cloved minced
1/4 tsp – Pepper
Salt to taste

Method:
Mix all the salad ingredients in a tight jar.
Shake vigorously to mix well.

Refrigerate all the vegtables for about 2-3 hours.
Dribble the dressing just before serving on the vegetables.
