Rice Recipes – Thai Rice (Khao Phat Phak)

Ingredients:
2 tbsp – Oil
1 cup – Rice
2 No – Shallots chopped
1 tsp – Garlic finely chopped
1 No – Green chilli sliced
3 tbsp – Carrots diced
3 tbsp – Bell peppers chopped
3 tbsp – Broccoli
3 tbsp – Baby corns sliced
4 tbsp – Pineapple chunks
1 tbsp – Light soy sauce
1/8 cup – Broth
1/2 tsp – Thai curry powder
1/4 tsp – Salt
2 tbsp – Coriander chopped

Method:
Use rice which is about a day old or cook the rice and keep it in the fridge for 3-4 hours before use.
Mix the soy sauce and curry powder and keep aside.
Heat the oil in a wok or pan, and when hot, fry the chillies, garlic and shallots until fragrant.
Then add the stock 2 tbsp at a time alternating with vegetables.
Add the rice and pineapple chunks.
Drizzle the soy sauce mix and stir-fry to combine over medium high heat.
Adjust seasoning if needed. Garnish with coriander and serve hot. Get Exotic THAI Rice Flavour Thai sticky rice OR
