Rice Recipes – Thai Basil Rice

Ingredients:
2 tbsp – Oil
1 cup – Rice cooked
1 No – Bell pepper medium diced
8 No – Broccoli florets chopped
2 No – Aubergine small variety chopped
2 tbsp – Coconut milk
2 tbsp – Basil chopped
2 tbspĀ  – Roasted cashews chopped or
2 tbsp – Peanuts crushed
1 tsp – Ginger grated
4 No – Garlic cloves minced
1-2 tbsp – Lemon juice
1/2 tsp – Coriander powder
1 tbsp – Soy sauce
1/4 tsp – Chilli flakes crushed
1 No – Red chilli fresh minced
Salt to taste

Method:
Boil the rice and set aside.
Heat oil in a pan add the ginger, garlic, chillies and cook till fragrant.
Add the seasonings and vegetables and cook over high heat for 2 mins.
Add the coconut milk and cook for another 5 mins.
Add the rice. Garnish with cashews or peanuts and serve.
