Rice Recipes – Spinach Rice

Ingredients:
1 tbsp – Oil
1 cup – Rice
2 cup – Spinach chopped
1 No – Potato large diced
1/8 cup – Peas
1/2 tsp – Cumin seeds
2 No – Green chillies chopped
1/2 tsp – Garlic chopped
1 No – Onion chopped
1/4 tsp – Ginger chopped
1 tsp – Coriander powder
1 tsp – Garam masala
4 tbsp – Coconut
2-3 tbsp – Lemon juice
Salt to taste

Method:
Heat the oil in a pan, and when hot, add cumin.
Once they crackle then fry the garlic, ginger, green chillies and onions until pink.
Add the coconut, spinach, potato and peas.
Add the rest except rice.
Cover and cook on low heat till well combined (10-12 mins).
Add more seasoning if needed.
Mix well and then add rice. Serve hot.
