Rice Recipes – Paella
Ingredients:
1 cup – Medium grained rice
2 tbsp – Olive oil
200 ml – Tomato juice
1 cup – Vegetable stock
4 tbsp – Hot water with 8-10 saffron strands dissolved
1 No – Red peppers chopped
1/4 cup – Mushrooms finely sliced
1 No – Onion medium chopped
1/2 No – Courgette finely chopped
1/4 cup – White beans
1/4 cup – Peas
1/4 cup – Green onions
2 No – Garlic minced
1/4 cup – Tomato puree
2 No – Red chillies
Salt to taste
Garnish:
20 gms – Cheddar cheese
8-10 No – Olives sliced
3-4 tbsp – Peppers sliced
Method:
Soak the rice in water for 1/2 hour.
Heat oil in a pan and saute spring onions, garlic, peppers and chillies till golden.
Add the remaining vegetables and cook further for about 5 mins.
Add the soaked rice and stir to coat with oil.
Add the stock and bring to a boil.
Then add the tomatoes and cook till rice is tender.
Add the saffron water and cook for 5 more mins.
