Rice Recipes – Mexican Rice

Ingredients:
2 tbsp – Salad oil
1 No – Carrot large
1 No – Red chilli sliced (serrano)
1/4 cup – Peas
1.5 cup – Rice
2 No – Garlic cloves minced
1 No – Onion chopped
1 1/2 cup – Tomato peeled deseeded finely chopped
3  cup – Vegetable stock
Salt to taste
Pepper to taste

Method:
Heat oil in a pan add onion, garlic and vegetables for 2 mins.
Add the rice and cook for 3-4 mins (till they get translucent) stock and seasonings.
Add the tomato broth mixture, stir and bring to boil.
Add the salt and chilli.
Simmer and cook till the liquid gets absorbed in the rice. Serve hot.
