Rice Recipes – Hunan Mein Chow Rice
Ingredients:
1/4 cup – Sesame or peanut oil
2.5 cup – Rice
2 tbsp – Soy Sauce
1 bunch – Spring onions chopped
1/4 cup – Corns boiled
1/2 cup – Peppers chopped
1/4 cup – Carrots chopped
1/4 cup – Runner beans chopped
1/2 cup – Green peas
1/4 cup – Walnuts chopped finely
1/4 cup – Almonds chopped finely
1 tbsp – Ginger paste
1 tbsp – Garlic paste
1/2 tsp – Pepper
2 tbsp – Soy sauce
1/4 tsp – MSG (optional)
Salt to taste

Method:
Boil the rice with about 1/2 tsp of salt and oil over medium flame. Stirring occasionally until tender but not over cooked.
Make sure that the grains are firm and well separated and then drain and set aside.
In a pan add oil and fry the nuts and set aside.
Then add the peppers, beans and carrots stir fry them over a high flame for 2 mins.
Add the remaining vegetables, ginger garlic paste and MSG (if using) continue to fry for 5 mins over high flame.
Add the seasonings and stir well.
Add the rice (should be cooked and cooled).
Stir fry it for 1-2 mins. Adjust seasoning.
Garnish with fried nuts and serve hot.
