Rice Recipes – Dry Fruit Rice
Ingredients:
2 tbsp – Butter
1 cup – Rice
1/2 No – Cinnamon stick
3 tbsp – Raisins
3 tbsp – Cashew nuts sliced finely
3 tbsp – Almonds sliced finely
3 tbsp – Walnuts
1/4 tsp – Saffron
1/8 tsp – Sugar
1/8 tsp – Cardamom
1/8 tsp – Nutmeg
Salt to taste

Method:
Dissolve the sugar and saffron in 1/8 cup of water adn keep aside.
Melt butter over medium heat and add cinnamon and nuts and cook till colour changes stirring continuously.
As soon as the rice is nearly cooked using a fork separate the rice (otherwise they tend to stick) and drain any excess water.
Add the the dry fruits with cardmom, nutmeg, saffron and sugar water. Cook for a few mins mix well and serve hot.
Option: You can alternatively fry the dry fruits and add the rice. Garnish with sugar water and saffron. Mix it in the rice using a fork.
