Rice Recipes – Coconut Rice

Ingredients:
2 tbsp – Oil
1 cup – Rice
1/2 tsp – Curry leaves
1/4 tsp – Mustard seeds
2 No – Red chilli (break)
1 No – Onion (optional)
1/4 tsp – Ginger grated
1/2 cup – Coconut grated
1/4 tsp – Yellow split lentil (channa dal)
1/4 tsp – White gram lentil (urad dal)
Salt to taste

Method:
Heat oil in a large saucepan and add the seeds.
Once they splinter add ginger, onion, chillies and coconut and fry for 1-2 min over a low flame.
Add rice. Adjust seasoning if needed.

For making curd rice replace coconut with 2 cups of curd and leave out the yellow split lentil. Rest follow the same and mix thoroughly. This will be a very mushy mixture.
