Rice Recipes - 9


Curd Rice


Ingredients:
1 cup - Rice
2 cup - Curd
1/4 tsp - Curry leaves
1/4 tsp - Mustard seeds
2 No - Red chilli (break)
1/2 tsp - Split white lentils(urad dal)
1 No - Onion chopped (optional)
Salt to taste


Method:
Heat oil in a large saucepan and fry the curry leaves, mustard, red chillies, urad dal and onions. Cook for 2 mins (onions need not brown).
Over cook the rice and mash them well.
Add the curd and mix till well combined.
Add the fried spice mix and mix again. Serve hot.



Recipe - 10


Vegetable Rice


Ingredients:
1 cup - Rice
1 No - Onion chopped
1/2 cup - Mixed vegetables
2 tbsp - Lemon juice
1 No - Bay leaf
1 No - Cinnamon stick
1 tsp - Coriander powder
Salt to taste


Spice Mix
2 tbsp - Coconut grated
1 inch - Ginger chopped
2 No - Green chilli chopped
1 tbsp - Garlic chopped
4 No - Cardmom pods
1 tbsp - Poppy seeds
Pinch of grated nutmeg

Method:
Grind all the spices together.
Heat the oil in a pan, and fry the cinnamon, bay leaf and onions till brown.
Add the vegetables cook for a while.
Add the spices and continue to cook.
Once done mix in the rice and serve hot with curry or dal.
