Rice Recipes - 7

Thai Rice (Khao Phat Phak)


Ingredients:
2 tbsp - Oil
1 cup - Rice
2 No - Shallots finely chopped
1 tsp - Garlic finely chopped
1 No - Green chilli sliced
3 tbsp - Carrots diced
3 tbsp - Peas boiled
3 tbsp - Corns boiled
3 tbsp - Green beans sliced
4 tbsp - Pineapple chunks
1 tbsp - Light soy sauce
1 tsp - Thai curry powder
1/8 tsp - Pepper
1/4 tsp - Salt
2 tbsp - Coriander chopped


Method:
Use rice which is about a day old. Cook the rice and keep it in the fridge for 3-4 hours before use.
Heat the oil in a wok or pan, and when hot, fry the garlic and shallots until fragrant.
Add the vegetables and seasonings and cook for 2-3 mins.
Add the rice and continue to stir fry for 2-3 mins.

Rice Recipe - 8


Spinach Rice


Ingredients:
1 tbsp - Oil
1 cup - Rice
1 cup - Spinach chopped
1 No - Potato medium diced
4 tbsp - Peas
1/2 tsp - Cumin seeds
2 No - Green chillies chopped
1/2 tsp - Garlic chopped
1 No - Onion chopped
1/4 tsp - Ginger chopped
1 tsp - Coriander powder
1/4 tsp - Garam masala
4 tbsp - Coconut (optional)
2-3 tbsp - Lemon juice
Salt to taste


Method:
Heat the oil in a pan, and when hot, add cumin.
Once they crackle then fry the garlic, ginger, green chillies and onions until fragrant.
Add the spinach, potato and peas.
Add the rest except rice.
Cover and cook on low heat till well combined (10-12 mins).
Add more seasoning if needed.
Mix well and then add rice. Serve hot.
