Rice Recipes - 1


Fried Rice


Ingredients:
1 tbsp - Oil
1 cup - Rice
3 No - Green onions whole shredded
1/4 cup - Mushrooms chopped shredded
1/4 cup - Carrots shredded
1/4 cup - Long Beans shredded
2 No - Garlic cloves minced or
1 No - Veg seasoning cube
1/4 tsp - Ginger grated
1/8 tsp - Pepper
2 tbsp - Light soy sauce
Salt to taste


Method:
Soak the rice for 1-2 hr and then cook (make sure the rice grains remain slightly firm not too soft). Drain and set aside. If possible try and cook the rice about 1-2 hours before making the actual recipe, for better results.

Heat oil in a pan and saute onion garlic and ginger till soft.
Add the remaining ingredients and briefly fry for about 2-3 mins.
Add the seasonings mix well.

Rice Recipe - 2


Dry Fruit Rice


Ingredients:
2 tbsp - Butter
1 cup - Rice
1/2 No - Cinnamon stick
3 tbsp - Raisins
3 tbsp - Cashew nuts sliced finely
3 tbsp - Almonds sliced finely
3 tbsp - Walnuts
1/4 tsp - Saffron
1/8 tsp - Sugar
Salt to taste
Pinch of cardamom
Pinch of nutmeg

Method:
Dissolve the sugar and saffron in 1/8 cup of water.

Melt butter over medium heat and add cinnamon and nuts and cook till colour changes stirring continuously.
As soon as the rice is cooked using a fork separate the rice (otherwise they tend to stick).
Add the cooked rice to the dry fruits with saffron and sugar. Mix well and serve hot.

You can alternatively fry the dry fruits and add the rice and cook till done. Garnish with sugar water and saffron. Mix it in the rice using a fork.
