Quick Easy Appetizers – Potato Omelet & Golden Baskets

Ingredients:
1/4 cup – Oil
4 No – Potatoes medium
2 No – Green chilli finely chopped
Salt to taste

Method:
Grate the potatoes in a bowl. Mix some salt in it.
Heat a fry pan (cast iron if possible). Add a spoon of oil on it and drop some of the grated potatoes.
Immediately lower the flame and continue to cook.
Sprinkle some of the chilli bits and if needed leave some more oil along the potato periphery.
Flip it over to the other side and cook till golden.
Remove and serve with sauce.

Golden Baskets

Ingredients:
10 No – Ready tart cases
2 tbsp – Oil
1/2 cup – Sweet corn kernels boiled
1 No – Onion finely chopped
1 No – Potato boiled finely chopped
2 No – Red chillies finely chopped
1 1/2 tsp – Garlic
1 tbsp – Soy sauce
1/2 tsp – Salt
1 tsp – Curry powder
1/4 tsp – Turmeric
1/4 tsp – Pepper
2 tbsp – Coriander chopped

Method:
Heat oil in a fry pan and saute the garlic and chillies for a minute.
Add the rest and mix well.
When the mix is well coated remove and allow it to cool.
Fill the Pidy Rhinewood Tart Shells with the mix. Garnish with coriander and serve.
