Party Food Appetizers – Vegetable Rice Balls

Ingredients:
1-2 tbsp – Oil
1 cup – Cooked rice (small variety)
4 tbsp – Onions finely diced
4 tbsp – Peppers finely diced
4 tbsp – Carrot finely diced
4 tbsp – Runner beans finely diced
1 tbsp – Chillies finely diced
1 tsp – Garlic finely diced
1 tsp – Ginger finely diced
2 tbsp – Vinegar
2 tbsp – Soy sauce
2 tbsp – Cornflour
Salt to taste

Batter
3-4 tbsp – Refined flour
Water as needed

Method:
Heat oil in a pan and fry the ginger garlic and till colour changes.
Then add the vegetables and cook on high flame for a while. Should be soft.
Then add the rice and seasonings and mix well.
Remve the rice from the heat and mash very well on cooling.
Roll to make balls and dip in the batter and fry till golden brown. Serve with chilli sauce.

Batter shoud be of medium-thick consistency. Add water or reduce as needed.
