Party Food Appetizers – Sweet Sour Tofu

Ingredients:
2 tbsp – Oil
1 cup – Tofu cut in squares or cottage cheese
1 No – Onion cut in squares
1 No – Peppers cut in squares
1 No – Spring greens chopped
1 tbsp – Cornstarch
2 tbsp – Rice or white vinegar
1/4 cup – Pineapple juice
1/2 tsp – Ginger minced or grated
1/2 tsp – Garlic minced or grated
2 tbsp – Soy Sauce
Salt to taste
Pepper to taste

Method:
Heat oil over medium-high heat in a large skillet and toss tofu till brownish. Remove tofu from pan and set aside.
Put the pan on heat and then saute onion and bell pepper for about 5 mins.
Reduce heat to medium-low heat and add pineapple juice, vinegar and soy sauce.
Crush ginger, garlic to remove the juice and add it to the pan.
Boil the mix and stir in cornstarch and simmer for a while.
Gently stir in tofu and vegetables and garnish with greens. Serve.
