Party Food Appetizers – Pea Cashew Nut Canapes

Ingredients:
4 tbsp – Butter
1/4 cup – Oil
12 No – Bread slices
1/2 cup – Cottage cheese diced
2 No – Onions finely chopped
1/4 cup – Cashew nuts chopped
2 tbsp – Yogurt
1/2 cup – Peas
1 tsp – Garlic crushed
1 tsp – Green chilli paste
1 tsp – Ginger paste
1 tsp – Curry powder
1 tsp – Cumin powder
1 tsp – Garam masala
1 tbsp – Currants (optional)
Salt to taste

Method:
Grease cup cake tins with butter.
Thinly slice the white bread with the crusts removed. Wet slightly on both sides and press them into the tin.
Apply butter on top and crisp them in the oven (approx 150°C). Remove from the oven to cool.

Heat oil in a pan and fry the cottage cheese and cashews and set aside.
In the remaining oil fry onions till brown.
Add the powders, pastes and currants and saute.
Then add the rest and cook till the mix gets dry.
Top the canapes with the mixture and serve.
