Party Food Appetizers – Grilled Wraps in Cashew Almond Sauce
Ingredients:
1/4 cup – Oil or Butter
5 No – Tortillas Low Carbs 8-Inch Multigrain Tortillas
1/4 tsp – Ginger minced or grated
1/2 tsp – Garlic minced or grated
1 No – Pepper chopped
1 No – Onion chopped
1 No – Zucchini chopped
1/4 cup – Cabbage shredded
1 No – Carrot chopped
1/4 cup – Mushroom
1/2 cup – White sauce
1/2 tsp – Mixed herbs
1 tsp – Red pepper flakes
1/4 cup – Tomato puree
1 tbsp – Ketchup
12 No – Cashews chopped
12 No – Almond chopped

Method:
Soak the almond and cashew nuts in water for about 1/2 hr.
Remove and grind to make a paste (thick consistency).
Put the vegetables on a baking try and baste with oil and grill till brown.
Heat butter in a pan and saute onion, garlic till colour changes.
Add the cashew almond paste and keep stirring and cook for about 2-3 mins.
Add the tomato puree, and seasonings and cook further 5-7 mins.
Add the white sauce and mix well.
If the mix is too thick to spread, then add some water and cook.
Mix the vegetables in the sauce.
Alternatively, spread the sauce on the tortilla wraps and add the vegetables to it.
Baste the tortillas with oil and grill to make crisp.
Or put some oil on a large skillet and toss the tortillas till crisp.
Slice to make mini wraps or serve as it is.
