Paella


Paella or Spanish rice


Ingredients:
1 cup - Medium grained rice
3 tbsp - Olive oil
1 cup - Vegetable stock
2 tbsp - Water with 8-10 saffron strands dissolved
1/4 cup - Peppers chopped
1/4 cup - Mushrooms finely sliced
1 No - Onion chopped
1 No - Courgette finely chopped
1/2 cup - White beans
1/2 cup - Peas
1/4 cup - Green onions
1 tsp - Garlic minced
1/4 cup - Tomato puree
4 No - Red chillies
Salt to taste

Method:
Heat oil in a pan and saute spring onions, garlic, peppers and chillies till golden.
Add the remaining vegetables and cook further for about 7 mins.
Add the par boiled rice to the above mix.
Add the stock and tomatoes bring to a boil.
