Noodle Recipe – Sichuan Noodles

Ingredients:
1/2 tbsp – Sesame oil
5 cup – Flat noodles
2 No – Spring onions whole sliced
1 tsp – Peppercorns ground (sichuan if possible)
2 1/4 cup – Shiitake mushrooms trimmed
3/4 cup – Vegetable broth
1 tbsp – Garlic minced
1/2 tbsp – Ginger paste
1 tsp – Chilli paste/chilli sauce
2 tbsp – Light soy sauce
1 tbsp – Plum sauce
2 tbsp – Asian sesame paste
1/2 tbsp – Rice vinegar (optional)

Method:
Cook the noodles drain and set aside.
In a pan whisk soy sauce, rice wine, plum sauce, sesame paste, and broth.
Add the tofu to this mix and marinate for about 15-20 mins.
Heat oil in a pan 1/2 the onions, garlic, ginger and chilli paste and cook until fragrant.
Add the mushrooms and cook till soft.
Add the marinated tofu.
Bring it to a boil then reduce to a simmer over medium-low heat and cook until slightly thickened about 5-7 mins.
Add noodles and mix.
Garnish with remaining spring onions and serve.
