Noodle Recipe - 9


Mint Flavoured Noodles


Ingredients:
2 tbsp - Oil
200gms - Noodle pack
2 tbsp - Mint leaves
1 tbsp - Leek finely sliced
1/4 cup - Broccoli florets
8-10 No - Snow peas sliced
1 No - Carrot sliced
1 No - Pepper sliced
1/4 cup - Mushrooms sliced
1 tsp - Vinegar
1 tsp - Soy sauce
1/8 tsp - Pepper
1 tsp - Sweet basil


Paste Mix
4 No - Dried red chillies
3 No - Shallots minced
1 tsp - Garlic chopped
1 tsp - Ginger chopped
1 tsp - Lime leaves
Salt to taste

Method:
Soak the chillies in water till they get soft then roughly grind the paste ingredients.
Heat oil in a large pan over high heat and add the paste saute until fragrant.
Add the vegetables and stir-fry for 2-3 mins.
Add the rest expect mint leaves and cook stirring continuously until well mixed for about 2 mins.
Stir in chopped mint.
Transfer to a plate and serve. Buy fresh Mint

Spianch Noodles


Ingredients:
2 tbsp - Oil
200gms - Glass noodles
1/4 cup - Bean sprout
1/4 cup - Spinach finely chopped
1/4 cup - Napa cabbage finely chopped
5 No - Bamboo shoots sliced
7-8 No - Mushrooms sliced
2 No - Scallions sliced
1 tbsp - Tamari soy sauce
1 tsp - Lemon juice
1 tsp - Garlic minced
1/8 tsp - White pepper
Salt to taste


Method:
Heat oil in a large pan over high heat and saute garlic till fragrant.
Then add the vegetables fry for a min.
Add the seasonings and mix well.
Add the noodles cook for 1-2 mins till well mixed. Serve. Tamari Soy Sauce, Wheat Free, Reduced Sodium, Organic
