Noodle Recipe - 7


Curry Noodles


Ingredients:
200gms - Noodles
2 tbsp - Chilli Oil
2 No - Spring onions sliced
1 No - Pepper large sliced
1/4 cup - Mushrooms sliced
1/4 cup - Tofu diced
1 No - Stock cube
1 tbsp - Soy sauce
1/4 cup - Coconut milk
2 tbsp - Coriander finely chopped
Salt to taste


Paste Mix
1 tsp - Garlic
1 tsp - Ginger
1/4 tsp - Tamarind paste
1/4 No - Peppercorns
1/4 No - Coriander seeds
Pinch of cinnamon


Method:
Grind the paste ingredients.

Heat a wok or frying pan over medium-high heat.
Add chilli oil, coriander and paste.
Stir-fry briefly to release the fragrance.
Add 2 tbsp of coconut milk and stir into the paste.
Then add the vegetables and cook the mix for 2-3 mins.
Add the remaining coconut milk along with the stock cube.
Add the seasonings and cook for a 1-2 mins.

Tomato Noodles


Ingredients:
200gms - Noodles
2 tbsp - Oil
1 No - Dry red chilli
2 No - Spring onions sliced
100 gm - Mixed vegetables or frozen birds eye pack
1 No - Tomato peeled deseed chopped
1 tbsp - Tomato paste
1 tbsp - Soy sauce
1 tsp - Vinegar
1 tsp - Garlic
1 tsp - Ginger
Curry powder sachet
1/8 tsp - Pepper
Salt to taste


Method:
Heat a wok or frying pan over medium-high heat, add oil, and red chillies. Stir-fry briefly to release the fragrance.
Then add ginger and garlic and onions stir-fry for 1 to 2 mins until it begins to soften.
Add tomatoes and seasonings and stir-fry until soft.
Then add the vegetables and cook till soft.
