Mexican Rice



Mexican Rice


Ingredients:
2 tbsp - Vegetable oil
1 cup - Rice long grained
1/2 tsp - Garlic cloves minced
1/2 cup - Peas
1/2 cup - Corns
1/2 cup - Carrot chopped
1 No - Onion Chopped
1/2 cup - Tomato peeled and finely chopped
1 No - Veg cube
1/2 cup - Vegetable stock (optional)
1 1/2 cup - Water
Salt to taste
Pepper to taste


Method:
If you do not want to use the vegetable stock then use 2 stock cubes and 2 cups of water only. If you using stock make sure it's not thick (liquid).
Heat oil and add onion garlic and rice and cook till onions become soft and the rice go transparent.
Add the vegetable stock and seasonings to boiling water. Mix till well combined.
Then add the vegetables.
Simmer and cook till the liquid gets absorbed in the rice. Serve hot. Texmati Long Grain American Basmati White Rice, 36-Ounce Jars (Pack of 4)
