Mexican Casserole Recipe

Ingredients:
3/4 cup – Tacos crushed
1/2 cup – Monterrey jack cheese
1/4 cup – Olives sliced
1/4 cup – Zucchini sliced
1/4 cup – Red onions sliced
1/4 cup Sour Cream

Method:
Heat oil in a pan and add the onion and garlic cook till pink.
Add the tomato, jalapeños and parsley. Cook for 2-3 mins.
Add the beans and salt mix well and turn off heat.
At the base of the dish crush the tacos and pour the jack cheese.
Mix salsa with beans and layer it.
Top with olives, zucchini, red onions and cheese.
Add bake till cheese melts for 7-10 mins.
Remove from oven and layer with avocado mix and sour cream.

Ingredients:
1 No – Avocado chopped
2 No – Green onion chopped
1 No – Tomato chopped
1/2 tsp – Mustard
2 No – Green chillies
1 tbsp – Mayonnaise
1 tbsp – Cream cheese
1/2 tsp – Garlic
Salt to taste

Method:
Blend these ingredients in a food processor (but do not puree too much) and set aside.
