Mexican Casserole Recipe


Ingredients:
1 tbsp - Butter
1 No - Garlic clove minced
1 No - Onion finely chopped
1 cup - Cottage cheese diced
1 cup - Salsa
1/2 cup - Chopped olives or corn
1 No - Zucchini chopped
1 tsp - Paprika
2 cup - Tortilla chips crumbled
1 cup - Parmesan cheese or cheddar cheese
1/2 cup - Sour cream
Salt to taste


Method:
Soak the cottage cheese in sour cream for at least 1/2-2 hour for enhancing flavour.
Heat the butter in a pan and saute the onions and garlic.
Add the vegetables with the salsa and let the mix simmer.
Add 1/2 the cheese (can melt and add).
Remove from the heat, stir in the sour cream and cottage cheese and sprinkle the paprika.
Layer the base of the casserole dish, with crushed tortilla chips (1/2 of them) and add the prepared mix.
Garnish with remaining cheese and tortillas and bake.
