Mexican Appetizer Recipes – Vegetable Quesadillas
Quesadilla is a savoury dish which originated in colonial Mexico.
Though originally made from masa dough, the staple has witnessed change as it was passed down from prehistoric America (Mayans, Aztecs and a few other advanced cultures).
With the Spanish conquistadors arriving in the 15th century the dish was given a new name called ‘Quesadilla’ and cheesy bites, vegetables and meats were added for enhancing flavour. Thus, the quesadilla has evolved into a blend of the old and new world traditions.
Quesadilla vary according to regions. For instance, Salvadoran quesadilla is more like a pancake mixture, whereas, the Tex-Mex or Mexican ones are made from wheat flour or corn tortillas. They are served with sour cream, guacamole and salsa.
Ingredients:
1/4 tbsp – Butter
4 No – Soft wheat flour tortillas
1/2 cup – Mushrooms chopped
1 No – Large red onion diced
1 No – Large tomato diced
1/2 cup – Black olives pitted
1/2 cup – Corn kernels boiled
2 No – Bell peppers chopped
1/2 cup – Cheese grated
1/4 tsp – Garlic minced
1/4 tsp – Red chilly powder

4 tbsp – Sour Cream
1/2 cup – Salsa
Method:
Heat little butter in a pan and saute garlic till soft.
Then add the vegetables, cheese and seasoning and mix for a while. Turn off heat.
Spread the mix on one tortilla. Apply butter on the other tortilla and then place it over the vegetable one.
Make sure you seal the ingredients between the two tortillas, if needed use some extra butter.
Heat a wide pan, which can accommodate the tortilla.
Put the side on which butter is applied on the pan surface and apply the rest of the butter on the top of the other tortilla. Once the bottom side gets golden brown, flip over and cook the other side similarly.
